ippudo V Brooklyn Introduce
Welcome to Ippudo V Brooklyn: A Plant-Based Revolution in Ramen
In the vibrant and trendy neighborhood of DUMBO, Brooklyn, a culinary game-changer has arrived for New York’s Japanese food enthusiasts and plant-based diners alike: Ippudo V. As an evolution of the globally-renowned Ippudo ramen chain, Ippudo V stands out as a unique, fully plant-based ramen specialty restaurant. It is a bold, innovative concept store that completely reimagines the traditional IPPUDO experience, offering a menu where every item—from the rich, comforting ramen bowls to the flavorful gyoza and creative sushi rolls—is entirely vegan. This is more than just a place to eat; it's a testament to the fact that deeply satisfying, umami-rich, and authentic Japanese comfort food can be crafted without a single animal product.
The philosophy at Ippudo V is simple: embrace plant-based creativity while uncompromising on the deep, complex flavors that have made the brand a global staple. The culinary team meticulously develops proprietary broths that riff off the classic styles—Tonkotsu, Shoyu, Miso, and Shio (styled as "chicken")—by simmering a masterful blend of plant-based ingredients to extract their rich, savory essence and then infusing them with house-made oils for perfect texture and mouthfeel. Local New Yorkers rave about the authenticity of the experience, noting that the chewy, egg-free noodles and the incredibly rich broths stand toe-to-toe with any traditional ramen shop. Whether you're a devoted vegan, a curious flexitarian, or a traditional ramen purist, Ippudo V is poised to become your new favorite DUMBO dining spot for lunch, dinner, or a quick, satisfying bite.

★ 5★ 4★ 3★ 2★ 1Ippudo V Brooklyn is a true hidden gem! The Japanese-style noodles were spot on—perfectly chewy with such an authentic feel. The broth was unbelievably good, rich and flavorful in a way I didn’t expect from a vegan spot. On top of that, the roll was also excellent—fresh, well-balanced, and beautifully presented. The combination of flavors makes this place stand out, and it proves that vegan dining can be just as satisfying and delicious as any traditional ramen shop. Highly recommend for anyone craving authentic Japanese flavors with a plant-based twist!
August 23 · S MThe restaurant is ideal for vegetarians and vegans. We went in to give it a try and it was excellent. The service was courteous, the place was clean, and the dishes tasted wonderful. Even the kids enjoyed it.
September 27 · Dor Ben DovIt is a vegan Japanese restaurant, part of the Ippudo chain from Manhattan. The food is great for Japanese taste, but lacks spiciness if you are looking for something hot. The prices are a bit steep, but the ambience is great. We ordered a lot of Ramen and some appetizers. Everything was good but we were looking for something spicy, so were a bit disappointed. Overall the atmosphere was nice and the service was fine, but the food could have been better.
August 02 · Amish BhavsarReally cute place and the staff are very nice. The food is OUTSTANDING. The Maitake tempura was perfectly cooked and the curry sauce it comes with is good enough to drink. The gyoza filling is delicious and tastes like real meat. The Hakuna Matata ramen comes with the natto on the side, so if you aren’t a fan you can leave it out. I love all thing truffle so the shojin ramen was a must-try for me. The crispy onions soak up the broth really well. All of the ramen dishes have slightly different noodle shapes which is a great detail. Definitely would eat here again.
September 13 · Alice HellmanIncredible ramen with top quality ingredients and lots of umami! Superior to most ramen places (even the original Ipuudo) as they don't use processed food, sauces or any added refined sugar to the ramen broth and ingredients! The staff were attentive and diligent to triple check dietary restrictions. So glad to hear no refined sugar was used for the ramen, cucumber appetizer, and maitake tempura, unusual for Japanese cuisine. We also tried the natto which was not as strong as much more tolerable. Highly recommend and definitely coming back!
