Most ice cream manufacturers are judged by their vanilla. At the Brooklyn Ice Cream Factory, consistency and purity are the cornerstones for this classic flavor. Vanilla should accept all toppings or just stand alone as a clean, fresh delicious delight. Nielsen Massey are the world’s foremost vanilla buyers. Their commitment to using the best quality beans to make the most consistent vanilla extract is what makes every batch of ice cream the same. Vanilla beans can vary from crop to crop and their process of blending crops and growths of beans yield a very stable product. We are proud of the fact that our vanilla tastes the same today as it did when we first opened. There is no sacrifice for quality.
- CHOCOLATE
We blend our own chocolate using 22-24% naturally processed cocoa powder and turbinado sugar. This rich chocolate slurry is churned at a slow speed until it is as smooth as silk. It is then mixed and frozen on our 5 gallon Emery Thompson batch machine which yields a consistency of chocolate whipped cream. After eight hours in a blast freezer this flavor does not need anything else to satisfy your chocolate cravings.
- VANILLA CHOCOLATE CHUNK
This classic flavor combines our vanilla ice cream with Barry Callebaut dark, soft chunks of chocolate. The simplicity and elegance of this flavor will leave you thinking about another scoop. The chocolate chunks melt in your mouth as you savor the vanilla flavor. Your palette will remember this match made in heaven.
- CHOCOLATE CHOCOLATE CHUNK
Just when you thought the chocolate could not get any better, we add those Barry Callebaut chunks of chocolate to the ice cream just because we can. The final product is as decadent as chocolate can get. This is a real chocolate lovers delight. There is nothing else to say.
- STRAWBERRY
Strawberry ice cream. Individually Quick Frozen (IQF) strawberries that are picked at the height of vine ripeness are macerated in turbinado sugar for 36 hours to make this creamy, frozen fruit concoction. The maceration process turns all of the water in the strawberries into a full bodied puree that blends with the cream to give your tongue a trip through strawberry fields.
- PEACHES & CREAM
A peach needs to be picked at precisely the right time to maximize its flavor. If picked too early, a rubbery ball turns into a bland, mealy piece of fleshy substance. If picked too late, you are left with a rotten mass. However, if picked at the right time, you are left with a sweet, juicy succulent piece of magic. IQF peaches which were picked at just the right time are utilized because of this delicate fruit’s properties. This is a very subtle flavor which appropriately allows you to experience the full flavor of a very misunderstood piece of fruit. We allow turbinado sugar and sliced peaches to get acquainted for 24 hours before we blend them with cream. Patience and handling the fruit properly are what makes the finished product delectable.
- BUTTER PECAN
This Butter pecan ice cream, is a flavor for nut lovers. We start by locating the perfect pecan. All nuts have a tendency to get stale quickly. We use whole pecans which we crush by hand just before making every batch to ensure freshness. The crushed pecans are then added to a salty, caramel base which has been laced with molasses. The churning process blends these quality ingredients into a nutty frozen treat much to the delight of the sweet and savory crowd. This flavor is simple and complex at the same time. You will not need any toppings on this one.
- COFFEE
Okay, the last of the elite eight was started by some advice from an artisanal ice cream maker in Pennsylvania. Decaffeinated coffee is key to the success of this flavor. Caffeine has the ability to turn frozen desserts into a very bitter experience. Our coffee ice cream is produced using almost no water. The concentrated decaf coffee is blended with the cream only moments before being frozen. This process captures the robust coffee flavor and is then encapsulated by the freezing process. You are left with a “freeze dried” flavor of coffee that you will not forget.

The line went very fast, and the staff was very polite, friendly and helpful. As a new comer they gave my family and I the grand tour of the ice cream flavors. After our selections were made the professionals got to work. Within minutes our food was in our hand, and truly we were all in ice cream heaven. Total 1000/10 rating and I cannot wait to come back. If you happen to be in the area, please don’t hesitate to visit Brooklyn Ice Cream Factory, you will not regret it. Enjoy!
July 14 · John Smith IIIAfter having dinner nearby, I was in the mood for something sweet and the ice cream here did the trick! I sampled the peaches and cream flavor first because it sounded amazing but the peach flavor seemed to be lacking. Next I tried the chocolate chocolate chunk flavor and from that tiny sample, I knew that was the one. It was the kind of chocolate that is rich, and so full of chocolate flavor you’d think it was dark chocolate but it’s not. It’s sure to fulfill any chocolate craving you may have, at least that was the case for me. And if the ice cream itself wasn’t enough chocolate, there are medium chunks of chocolate every few licks.I ended up getting a single scoop on a waffle cone (+$1) and then bringing it to Brooklyn bridge park, just across the street, and taking a nice stroll with my ice cream in hand.The only downside was I can’t believe I didn’t eat it fast enough because it started to melt and drip on my hands… but you can bet I didn’t waste any!
July 25 · Edna LAfter an afternoon over at the Brooklyn Bridge Park, I stopped by the Brooklyn Ice Cream Factory for a late night sundae. I was pleasantly surprised by how friendly and helpful the staff were, despite it being close to their closing time.The guy who helped us gave us very useful recommendations on flavor choices. And he was right! The flavors we ended up with were quite good. Was the ice cream super fancy and novel? No. But it was very tasty in a classic ice cream shop kind of way. Would definitely come back next time I’m in the area, and would absolutely recommend it.
June 29 · Eddy GIt just so happens that there is an awesome bar attached to this popular ice cream shop right by the ferry spot in DUMBO, Brooklyn! I happened to notice it when I was walking around, passing so many spots with lines for days. The incredible thing about NYC is that next door to every spot with a line is also an amazing place. =) I stopped in to the BAR SIDE of the Brooklyn Ice Cream Factory and no regrets! Such a fun conversation with the bartender, Shamus, and a refreshing stop before I headed out on a few more hours of adventures. He may or may not have said I looked a little pale when I arrived. No shit. I walked for like 5 hours in a row and it was sunny and I had a 35# backpack load. LOL. I NEED ICE WATER PLEASE and THANK YOU. ;) The best time at this place and I will remember it forever and be back every chance I get.
