It’s new, it’s buzzy, it’s exactly the kind of spot East Williamsburg needs. From the outside, it’s modern, inviting, stylish. Inside, the pastries are gorgeous, the menu sounds delicious, and on a Saturday morning, the energy is high. Too high. Within minutes of arriving, the place turned crowded and chaotic, the kind of scene you’d expect at Win Son Bakery. They’ve been open only a short time, so growing pains are fair but they really need to rope off the line so people know where to stand and to keep the traffic flow under control.I ordered the AEC (avocado, sharp cheddar, fluffy eggs, chipotle aioli on their house brioche bun). It looked beautiful. But eating it was like trying to run up a muddy hill. The eggs and avocado slid right out with every bite. It’s impossible to eat by hand without dismantling the whole thing, and I wasn’t the only one resorting to a fork and knife. It’s baffling that no one in the kitchen tested this sandwich for actual eatability.If you’re grabbing something to go, this place is fine. But sitting down? Not so much. The seating is cramped, the tables are crammed together, and the vibe feels less like a cozy café and more like a forced group activity. There’s also no restroom, which feels like a major oversight given how busy it gets.I’ll check back in a few months to see if they’ve worked out the kinks. I really do want this place to succeed. But for now, Smør Bakery is a great place to pick up something beautiful for the road, not somewhere you want to linger.
