Put a large pan on a stove and add the olive oil to it.Set the heat to medium-low intensity. Add the chopped onions and sauté themuntil they’re tender. It should take no longer than 5 minutes. Change the heat from medium-low to low on the stove. Adddry spice and tomato paste into the chopped onions and mix it all together. Nowadd the chopped garlic cloves into the mixture and stir it all together. Next,add the thyme and parsley to the mixture and stir it around for about 3minutes. If the olive oil and juices get absorbed by theingredients, you can add more olive oil if the pan is too dry. Don’t add toomuch. Just a teaspoon should be good enough. The idea is to prevent the garlicand other ingredients from getting burned. If they do get burned, then it willdiminish their flavor. Add several different layers of vegetables, starting inthis order: eggplant, whole garlic cloves, onions (use the leftovers), cabbage,spinach, whole scotch bonnet pepper. Pour 1.5 cups of water into the mix.Increase the heat intensity to medium. Cover the pan and let the food cook forup to 40 minutes. Once the vegetables are tender, take out the scotchbonnet pepper and throw it away. Use a spoon to mash up the vegetables andblend them together. Don’t make it mushy, though. Put string beans and carrotsinto the pan and mix them together. Leave it to cook for 5 minutes. Add 0.25cups of water if the pan dries out.

Mix meat and seasonings. Shape into 1 inch meatballs. Put enough water in saucepan that the meatballs will be covered. Bring to a boil. Add 1 meatball at a time so water does not stop boiling. Cook until liquid is reduced to about 1c - about 30 minutes. Whisk in flour to thicken and reseason to taste. Should you overthicken, just add more water to desired consistency. Serve over rice or noodles or by itself.

Saute garlic & shrimp, take out the shrimp put it aside, add your water 10 cups season to taste, bring to boil, add 5 cups of uncooked rice, taste again add salt or whatever you want. When rice water starts to evaporate, add the frozen green peas on top puls the shrimp. Let cook, when cooked about 20min. mix & serve. Or you can just saute the shrimp the peas all together and add the water then season to taste when it boils then add rice stir once let cook (water has to evaporate.) when the water is evaporate then you cover the pan and let cook for about 20 min. either way is good.

I got rice and beans, fried pork, and a side of plantains. Everything is seasoned perfectly! The plantains are so crisp on the outside and tender inside. This is hard to find as most places make dry brittle fried green plantains. This is a genuine review that I had to come make as I am pleasantly surprised!

And even sustainable packaging. I've never been disappointed with the food. Their rice and beans as well as the white rice and sausse pois are great, particularly if you're a vegetarian, like I am.My only feedback might be that the portions could be a bit more generous however the overall experience has been top notch, EVERY VISIT.

Whether it is a birthday celebration, date night with your significant other, graduation, funeral, intimate small wedding reception, etc., this place is THE place for you. The owner is very flexible with your needs and makes your special night super memorable. A plus: there's a dancing floor to digest the food or get cozier with the date. Carlie's Corner is MY fave restaurant. Recommend to all! You won't regret it.
October 29 · Noucelyne CharlesToday was my first time buying food from this fine restaurant. I had a taste for legume with lambi. Most Haitian restaurants seem to only have Haitian customers when I go so it's assumed that we all speak creole. When I told them I didn't they were still cool and friendly lol because hey not all Haitians speak the language. They didn't have legume with lambi but said they would prepare it for me... well lemme tell you that it is DELICIOUS. The lambi was cooked to perfection and so very tender and was WAY better than that expensive place in Lefferts Garden. I will definitely go back for more and have already told my friends how I love the legume.
