Before any meals were prepared, they'd wash dust and mop. It's a well managed and maintained establishment. The food is consistently fresh and good. If fried plantains or yucca is what you desire and they don't have any prepared. The chef in the back will prepare it for you (hand cut, not that stuff from the bag). The staff understand that all you got is 30 minutes for your lunch break so you gotta get in and out and their coffee is the best of all the Caridads in the area ...
