La Vara Introduce
Nestled in a quiet yet vibrant corner of Brooklyn, La Vara is a restaurant that offers far more than a typical Spanish tapas experience. This acclaimed establishment, a creation of the talented husband-and-wife team Alex Raij and Eder Montero, is a culinary journey into the rich, intertwining influences of the Moorish and Jewish traditions on regional Spanish cuisine. The menu is an artful and imaginative exploration of these legacies, with dishes perfumed with aromas of saffron, cumin, and orange blossom, as noted in their story. The atmosphere is an inviting mix of cozy, romantic, and upscale, creating a perfect backdrop for a special occasion or an intimate dinner. While its concept is deeply rooted in history, the execution is entirely contemporary, showcasing a bold and improvisational spirit that makes dining here a truly original and authentic experience.
La Vara's reputation is built on its exceptional food, but it is equally celebrated for its welcoming ambiance and professional service. The "bustling" yet "civilized" nature of the restaurant creates a lively buzz without being overwhelmingly loud, allowing for conversation and connection. Customers frequently praise the "amazing service and atmosphere," noting the personal touches that make a meal feel truly special. As a women-owned business, it holds a unique place in the New York dining scene. Its popularity for dinner and solo dining underscores its versatility, offering an inviting space for both an evening out with a group and a quiet moment of culinary indulgence. While some dishes may not be a perfect match for every palate, the overall consensus is one of excellence, with many patrons enthusiastically recommending the restaurant and highlighting specific dishes as "an ABSOLUTE must." This balance of creativity and high-quality execution is what makes La Vara a contender among the city's best.
The culinary journey at La Vara is defined by its small plates, or "pica pica," which are designed to be shared and savored. The menu is a treasure trove of creatively crafted dishes, from the popular crispy eggplant with honey to the Gibraltar grilled chicken heart. One customer review noted that the Ajo Blanco and a cucumber grain salad were favorite dishes, while another raved about the chocolate flan, calling it "one of the best desserts I've had in New York City." The chefs' playful and creative spirit is evident in every dish, from the slow-roasted suckling pig to the flavorful lamb belly. This dedication to quality and unique flavor profiles ensures that a meal at La Vara is not just a transaction, but a memorable event that delights the senses and encourages conversation.

★ 5★ 4★ 3★ 2★ 1Really really good. I'm not giving a five stars just because I think some of the dishes were a bit of a miss for me and five stars is a perfect rating. But this restaurant is excellent and I would 100% recommend it.The chocolate flan is an ABSOLUTE must. It is one of the best desserts I've had in New York City and one of the best bites of the yearFavorite dishes I had here were the Ajo Blanco and the cucumber grain salad
September 15 · jadePretty place and great food! Everything had a lot of care put into it. By far my favourite dish was the ensalada de calamar (also really loved the beans!), but everything was good. I wish the octopus was sliced just a touch thicker, as I primarily love the texture. It was not a lot of octopus for the price. I was also a little surprised that the suckling pig didn’t come with anything else on the plate, as I feel like the tximitxurri alone was almost not enough to balance out the very porky taste of the roast. I would personally prefer coming to this place as a party of two. There were many dishes I felt myself wanting more of when shared between 3 people (mainly for the first part of the menu—excluding the last 5 more “entrée” items). If it’s a good day, I recommend asking for outdoor seating if available. It’s a quiet neighbourhood, and talking will be easier outside.
July 15 · Tristen HuangLovely atmosphere and great service. The dishes are creative and delicious. The anchovies dish was probably the most surprising and very good. The rossejat was a bit of a disappointment, it was pretty small, didn't have a much seafood as the menu suggested, and way too much aioli. Definitely recommend
July 19 · Yelena ConawayHad an extraordinary dinner here, very creative dishes, and amazing service and atmosphere. They had a wonderful sweet potato and squash tempura dish to start, a delicious and tasty risotto-inspired dish and then a truly good dish with noodles and various seafood. All three dishes rated 10/10 for taste and creativity. Only slight disappointment was the cheesecake dessert which didn’t seem fresh. But a wonderful value overall. Service at the bar was very personal and the chef brought by the dishes which was a nice touch.
December 02 · Richard SFood was great but the highlight of the dinner was the service! It was a very cute and nice experience!
