What is Worth Choosing
For first-time visitors to Natias Bakery or those new to Georgian cuisine, there are several menu items that are highly representative of the country's rich culinary traditions and are definitely worth choosing. Georgian food is all about flavor, heartiness, and the joy of sharing, even if you’re just taking out for one.
The cornerstone of the Georgian menu is unquestionably the Khachapuri, the iconic cheese bread. Natias Bakery offers a few styles, and trying at least one is a must: Imeruli Khachapuri or Imeruli Yveli is a classic, circular flatbread with cheese baked inside. The Megruli Khachapuri is similar but features additional cheese baked on top. For the more adventurous, the Acharuli or Didi Ajaruli (Adjaruli) is the famous "cheese boat," a canoe-shaped bread filled with cheese, often topped with an egg and a pad of butter, which you stir into the molten center. This is a spectacular, filling choice.
Beyond the cheese bread, another essential Georgian food is Khinkali or Xinkali, which are large, pleated dumplings traditionally filled with spiced meat (pork and beef) and a flavorful broth. The proper way to eat them is to hold them by the top knot, take a small bite to slurp out the savory broth, and then eat the rest of the dumpling, leaving the doughy knot behind. This is a very authentic and satisfying experience.
For a hearty, comforting stew, consider the Ostri (a spicy beef stew with a rich tomato base) or one of the traditional soups like Supxarcho (Kharcho), a thick, savory beef soup with rice and walnuts. These items showcase the depth of Georgian flavors and the use of fresh herbs and spices.
Finally, since this is a bakery, save room for dessert. The Napoleoni (Napoleon cake) is a classic choice, offering delicate, flaky layers with a rich, creamy filling. Items like Ekleri (Eclairs) also provide a sweet end to the meal.
Natias Bakery provides a straightforward, casual entry into one of the world's most ancient and underrated cuisines. While local reviews indicate some service variability, the extensive and authentic menu of Georgian staples—especially the various Khachapuri and Khinkali—makes it a compelling destination for a quick and flavorful international bite in the Brighton Beach area of Brooklyn.

One of my absolute favourite things about Georgian food is its heavy reliance on vegetables and nuts to make absolutely delicious dishes, and this badrijani nigvzit recipe is just one example. These delicious Georgian eggplant rolls filled with a garlicky walnut paste are one of my absolute favourite Georgian dishes and something that I was keen on recreating ever since I first ate them on my first trip to Georgia. Not only do these eggplant and walnut rolls combine several classic Georgian flavours and techniques, but they are also completely vegan and make for an excellent appetizer that everyone can enjoy!

Making Acharuli, the stunning boat shaped Khachapuri or Georgian cheese-bread at home was highly thrilling. It was a collaborative project between Big Z and Lady M and the outcome was not only successful but soul-satisfying. Khachapuris are cheese-filled breads and are shaped in various ways. Traditionally, the cheese that is used is a regional cheese called sulguni. The acharuli khachapuris originated from the Adjaran region in Georgia. Over and above the generous cheese-filling in each bread-boat, a big blob of butter and an egg yolk sat right in the middle!
