The staff were super friendly and attentive!We ordered the ceviche, toro ssam bap, and jeju ribs which were all amazing! The ceviche had very fresh assortment of fish and shrimp with a lime (and yuzu?) mix, refreshing for this warm day. The toro ssam bap had so many flavors going on and was fun preparing them onto the seaweed with my partner. The jeju ribs was a highlight of sweet and savory, perfectly cooked tender ribs.It was a pleasant surprise to see that the serving sizes l turned out to be more food than we were expecting (we thought it would be like fine-dining tiny portions), so we ordered a little too much than we can eat since my husband also ordered the Gochu Ramyun for himself. We liked how firm the noodles were. The staff noticed us slowing down and offered to pack any leftovers to go which we appreciated the initiative.We can’t wait to go back with our friends!
May 03 · Lisa ZhaoBeing Korean who has lived in LA and Seoul for half my life, I’m usually very wary of upscale fusion Korean restaurants. Many of them seem to rely on luxury French and Japanese ingredients such as caviar, Wagyu, uni, foie gras and truffle to reach for Michelin stars at the expense of traditional Korean ingredients. But I was willing to try this place with an open mind. I managed to book a reservation to Jeju Noodle Bar during a brief two day trip to NYC. It was initially 3pm but I got a notification that 5pm at the counter was available and grabbed it immediately.Jeju Noodle Bar is in a busy neighborhood in West Village. Inside had the vibe of a dark and loud bar. We were seated at the end of the counter. We ordered the Toro Ssam Bap and some green tea to start. It was an interesting and decadent dish with minced toro, caviar, rice and uni with a side of toasted seaweed. It was tasty but having ate a lot of fresh toro at Tsukiji Market in Tokyo, I prefer the simplicity of toro nigiri for its taste and texture. I suppose for $48 you get what you pay for, but the sum of the dish didn’t feel equal to its parts.Next up were the entrees. I ordered the Lobster Ramyun. It was topped with a foam that had a rich buttery lobster flavor. Underneath the foam were brothless noodles that were the width of fettuccine but very dense and hard to lift out of the bowl. The sauce was creamy, infused with a lot of butter and lobster, almost like a lobster bisque.My partner ordered the Wagyu Ramen. The Wagyu was very thinly sliced over noodles that had the thickness of packaged ramen. The Wagyu wasn’t solid enough to get a quality bite. Slightly thicker pieces might’ve better retained the buttery and fatty goodness of premium Wagyu. Instead it disappeared into the broth with somewhat of a bland beef flavor. It seemed like a very safe dish that was meant to showcase the Wagyu but didn’t really pull it off, in my opinion.Those were the only dishes we ordered, and it came out to more than $200 with the tip. It didn’t feel like it was worth the hype and difficulty of getting a reservation. Despite bearing the name of the iconic Korean island, it felt a lot more Japanese than Korean. I would rather go to Tokyo and eat toro, uni and Wagyu at Tsukiji Market and ramen in Ginza or Shibuya.
September 16 · Danny K (DSKO)This was a highly anticipated meal, and delivered some incredible bites! Their Toro Ssam Bap and Truffle Scallops I would say are must orders on the menu. I think about them often. Their fried chicken was very good, but felt it's one of those dishes that are made fancier by adding caviar but isn't really integrated and elevated the same way the other 2 dishes were but will be back again for sure!

The toro saam bap was amazing with great texture and flavor, the fried chicken was great especially with the yogurt sauce, and the lobster noodle were exceptional with a creamy, flavorful taste, and the coffee soft serve was great. September 14 · Brandon RosenblumTrying to get a reservation to any restaurant nowadays is very difficult. Trying to get a reservation to Jeju Noodle Bar was nearly impossible. When I was finally able to attain one, I couldn't have been more excited to try this restaurant. Opened since 2017, Jeju has received a Michelin Star for the past 6 years, so they definitely have a great reputation.The restaurant opens at 5pm and walking into the restaurant at 5:10pm, the restaurant was already packed. The atmosphere was sleek & chic, but not overboard. We were seated right away, and our glasses filled with water. The funny thing was the servers all looked like bouncers at a club so I was confused at first. Our server ended up being really nice, and the service team was really coordinated, working well together to create a great atmosphere.We ordered the Toro SSAM Bap, Truffle Scallop, Fried Chicken for appetizers, and the Wagyu Ramen, and Gochu Ramen for our Entrees.The Toro SSAM Bap (Toro, Golden Osetra Caviar, Melty Egg, Rice) was Fresh & very Rich. It came with little Roasted Seaweed squares, so you can make little handrolls.The Truffle Scallop was a very elegant, adult tasting dish. Fresh-shaved earthy Truffles, covered Sweet Scallops and Corn. The vinaigrette was what really pulled everything together. It had a beautiful balance of sweet, acidity, and savory.The Jeju Fried Chicken had a lot of great reviews so I was looking forward to this dish. The Chicken itself was Crispy, Juicy, and well-seasoned. The Chicken wasn't greasy at all and didn't feel heavy. The Yogurt sauce was a nice compliment, and the Golden Caviar, added a briny touch to enhance the Chicken.As a Ramen lover, I was really excited to try their Ramen. The A5 Wagyu Ramen came with a nice thin sheet of raw A5 Wagyu, Enoki, Brisket, Sesame, and Charred Scallion Oil. The Beef Bone Broth had an intense silky Beef flavor, and the Noodles were Firm and Chewy. The Wagyu melted in your mouth and overall it was an elegant bowl of Ramen. I did feel like it was a little monotone, and something like a Wasabi vinegar sauce on the side would've added the acidity to helped break up the monotony.The Gochu Ramen came with a Rich Pork Bone Broth, Grilled Pork Belly, White Kimchi, Wood ear Mushrooms, Charred Scallion Oil, and an intense Gochujang Sauce. The server asked us to mix everything together to get the full flavor of the ramen. This Ramen dish hit all the notes. The Broth was Spicy, sour, savory, and made it hard to stop eating. Both Ramen bowls were very enjoyable and you can't go wrong with either.Jeju Noodle Bar was worth the time and effort to get a reservation, and it is definitely worth another visit to try the other menu items. This place is on the pricier side, but the food, atmosphere, and service will make it worthwhile for you.
