My husband and I spontaneously came across this spot and was lucky to get seated as a walk-in when they opened at 3pm!The ambience was nice, it felt upscale but casual at the same time. The staff were super friendly and attentive! We ordered the ceviche, toro ssam bap, and jeju ribs which were all amazing! The ceviche had very fresh assortment of fish and shrimp with a lime (and yuzu?) mix, refreshing for this warm day. The toro ssam bap had so many flavors going on and was fun preparing them onto the seaweed with my partner. The jeju ribs was a highlight of sweet and savory, perfectly cooked tender ribs.It was a pleasant surprise to see that the serving sizes l turned out to be more food than we were expecting (we thought it would be like fine-dining tiny portions), so we ordered a little too much than we can eat since my husband also ordered the Gochu Ramyun for himself. We liked how firm the noodles were. The staff noticed us slowing down and offered to pack any leftovers to go which we appreciated the initiative. We can’t wait to go back with our friends! - Lisa Zhao

Jeju Noodle Bar Introduce

In a city as dynamic and diverse as New York, few restaurants manage to create a category all their own, but Jeju Noodle Bar has done just that. This establishment, nestled in the heart of the West Village, is a true culinary anomaly: a Michelin-starred noodle bar that elevates Korean ramyun to a fine dining art form. It's a place where the humble comfort of noodles meets the meticulous technique and luxury ingredients of a world-class restaurant. The atmosphere strikes a perfect balance, feeling both upscale and casual, with a trendy, cozy vibe that makes it accessible to a wide range of diners, from college students to seasoned tourists. The concept, conceived by Chef Douglas Kim, is an innovative interpretation of Korean food, drawing on his extensive experience in some of the world's most prestigious fine dining kitchens. This is not your typical Korean eatery; it's a place that pushes boundaries and challenges expectations, creating a new and exciting definition of what Korean cuisine can be in the American landscape. The restaurant has garnered significant attention and has become one of the most sought-after reservations in the city, a testament to its unique and compelling vision.

The menu at Jeju Noodle Bar is a masterclass in creativity and flavor. While the star of the show is undoubtedly the ramyun, the appetizers and other main courses are equally impressive. Diners can start their meal with the celebrated **Toro Ssam Bap**, a decadent and flavorful dish with fatty tuna, caviar, and egg, often noted by patrons as a must-try. Another standout is the **Jeju Fried Chicken**, which offers a creative and delicious take on a Korean classic. The main courses showcase the restaurant's expertise with noodles, featuring options like the rich and savory **Gochu Ramyun**, the luxurious **Wagyu Ramyun**, and the comforting **Lamb Ja Jang Myun**. The restaurant is also praised for its use of fresh, healthy, and high-end ingredients, with dishes like **Hae Mul Ceviche** and **Truffle Scallop**. The drink menu is thoughtfully curated to complement the food, offering a selection of **Beer**, **Wine**, and **Alcohol** that includes unique options and small plates, perfect for pairing. Despite some reviews that may find the dishes to be a "fusion" and not strictly traditional, the overall consensus is that the food is a delicious and innovative interpretation of Korean flavors. The service is often described as "super friendly and attentive," with staff who are happy to guide you through the menu and even pack up leftovers, making the experience both luxurious and personable.

Jeju Noodle Bar is located at **679 Greenwich St, New York, NY 10014, USA**. This prime location places it in the historic and vibrant West Village, an area known for its beautiful residential streets and lively dining scene. Nearby stations include the Christopher St – Sheridan Sq station (1 train) and the Houston St station (1 train). The West Village location is part of the restaurant's charm, offering a cozy and intimate setting away from the more commercial areas of the city. While parking in the area can be a challenge, there is a mix of both **free street parking** and **paid street parking** available. The restaurant's popularity means that it can be a busy neighborhood, but its location on Greenwich Street still manages to provide a sense of quiet sophistication. The atmosphere is described as being "like a dark and loud bar" with a "nice" vibe, a true mix of trendy and casual that reflects the neighborhood itself.

The limited service options emphasize that Jeju Noodle Bar is a destination for a planned, special meal rather than a casual drop-in spot. This focused approach allows them to maintain a high level of quality and consistency.
