The fried rice had good flavor but was seriously affected by the excess of dried chili flakes and seeds, which meant either chewing through them or constantly picking them out. For hotpot I ordered the signature bean soup base but it lacked any distinct taste, and the average quality of the cured meat left the broth with an unpleasant smell. The 9 grid set menu was also problematic. I do not eat fish skin or kidney, yet they refused to substitute, so those dishes were wasted. A better approach would be allowing customers to choose their own items, even 6 out of 9, to avoid foods that some may not eat at all. Another issue was how quickly they cleared the plates. Bowls were taken away as soon as they were empty, which felt rushed. Clearing dishes promptly shows service, but here it was excessive. On the positive side, the fried potato cakes and rice tofu were quite good.

To be honest, I've been wondering this since I first saw this new-ish hot pot place open up a few months ago, and even after eating here, I'm still not entirely certain how to answer this question (other than some vague notions of sour broths). Anyway...My friend and I came by around 7pm on a weekday - there were still a handful of tables open for us, and I don't think there was ever a wait - but that might vary on weekends. I liked the interior decor -- lots of touches of "traditional" (aka old) Chinese architecture - and overall the place was quite airy and spacious, despite being in a windowless basement. (At least I don't remember any windows.)We ordered the hot and sour soup broth (貴州老凱里酸湯) and beef bone broth (牛排骨湯) for the soup bases. The server suggested that we could taste/drink some of the broth as it was warming up / our food was arriving --turned out to have been a great idea, because the broths were honestly so delicious.The mix of the pungent sourness (I assume the crux of the Guizhou aspect) and a hint of spiciness was fantastic, and actually the flavour was so fragrant and permeated in the ingredients that we felt we didn't really need any of the dipping sauce for the meats that we had cooked in the sour broth.The beef bone broth was also really good - rich flavours of the beef rib 牛排骨 throughout, and also there was so much meat? Like at least 4 or 5 huge pieces (at least 1-2 plates' worth).We ordered a pretty typical assortment of hot pot ingredients -- some highlights were the "special sliced beef" 酸Q肥牛, which despite being one of the cheapest options, was fantastic (and a classic) and the "hot pot wide noodle" 火鍋寬粉 - very chewy and tasty. We also ordered the spicy rice tofu 辣拌米豆腐 (one of our server's suggestions), which was yummy but also kind of anti climactic, since it basically just tastes like liangfen 涼粉 (especially in the chilli oil sauce).Price point was pretty solid -- it came out to be around $40-50 for each of us, which seems to be the prevailing rate for hot pot in NYC nowadays. We were both really full at the end of our meal, too -- really happy with the quantity and quality of the food that we ordered (could probably have gotten a plate or two fewer).There's so many things on the menu that I was interested in trying but couldn't, so l'll definitely have to come back again, hopefully with a bigger group to try even more dishes next time :)
April 23 · Matthew HoFirst time trying this hotpot place. If you are a big fan of eating sour, you would like this place. Their sour flavor soup base is full of tomatoes. If you like spicy, you might be a little disappointed. I personally don’t really like their spicy soup base. There is only spicy in it with no other flavor versus some other spicy soup base, not only do they have spicy flavor in it, but they also have other flavor in it. I am not sure if that makes sense but in my theory, spicy soup base shouldn’t just solely be spicy. We didn’t order much. We tried their fresh beef and special marbled beef. Their meat quality is quite good. I would definitely recommend those. Their shrimp paste is also a must try. There are a lot of shrimps in it. However, I wouldn’t recommend their handmade meatball. I personally don’t really like their texture. It tasted like dry pork meat to me. Other than that, their overall food and the environment is great. They are also people serving you make sure you have everything you need.

Made with fermented tomatoes and pickled chili, this broth has been a staple in Guizhou cuisine for centuries, prized for its ability to enhance ingredients without overpowering them. At Suan Q, the balance between acidity, spice, and umami is masterfully executed, creating a hotpot experience unlike any other.I ordered a variety of incredibly fresh ingredients, each one complementing the sour soup beautifully. The fatty beef and lamb were perfectly marbled, becoming unbelievably tender when swirled in the tangy, aromatic broth. Cabbage, bamboo shoots, and watercress soaked up the rich, layered flavors, adding a fresh, crisp contrast. Enoki mushrooms and radish softened in the soup, releasing their natural sweetness to balance the dish, while the udon noodles were chewy and satisfying, absorbing the broth’s essence in every bite. The meatballs were juicy and tender, infused with the broth’s signature tangy-spicy notes. Other great additions were the fish tofu, mini sausages, and shrimp paste, each bringing a unique texture and flavor that worked beautifully with the sour-spicy broth.One of the biggest highlights was the 米豆腐 (rice tofu), a specialty from Guizhou. Silky and delicate, it absorbed the sour broth beautifully, making it a must-try. Adding 折耳根 elevated the flavor even further, bringing an earthy, herbal kick that is both unique and addictive.Beyond hotpot, Suan Q also offers incredible side dishes. I ordered the pork lard fried rice, and it was absolutely amazing—spicy, sour, and packed with rich umami flavors. Every bite was bursting with wok-fried goodness, making it the perfect complement to the bold hotpot flavors.To complete the meal, I had their milk tea, served in an elegantly designed cup, which was smooth and rich, providing a delightful contrast to the meal’s spice. For dessert, the 冰豆浆 (iced soy milk dessert) was lightly sweet, creamy, and incredibly refreshing—the perfect way to cool down after the flavorful feast.The service was excellent, with patient and attentive staff who were happy to offer recommendations. The warm and inviting atmosphere made the entire dining experience even more enjoyable. There was still so much on the menu I haven’t tried yet, from more signature broths to specialty ingredients, and I’ll definitely be back to explore more.Suan Q Hotpot offers an immersive journey into Guizhou’s rich culinary culture. Their Guizhou Sour Soup Hotpot is unforgettable bold, complex, and deeply satisfying. This place is a game changer. I can’t wait to come back for another round!

The ingredients were fresh, and their signature snacks were also worth trying. The service was good, with staff being patient and attentive. This location used to be a BBQ music bar, and I heard that the old private rooms will be turned into a bubble tea spot in the future—something to look forward to!
