SUGARFISH by sushi nozawa Introduce
Introduction / Overview
SUGARFISH by sushi nozawa
is a distinctive and highly popularSushi restaurant
that has brought a touch of West Coast sushi stardom to the bustling streets of Williamsburg, Brooklyn. Unlike many traditional omakase experiences, SUGARFISH is designed to make high-quality, authentic Japanese sushi accessible and straightforward. The concept is rooted in the philosophy of the revered sushi chef, Kazunori Nozawa, whose decades of experience in the traditional Edomae style guide the entire menu and dining approach. The restaurant's signature is its commitment to simplicity and quality, embodied by the famous mantra:
“Don't Think. Just Eat.”
This encourages diners to trust the chef's curated selection, which is presented primarily through the fixed-price "Trust Me" menus—a format akin to an entry-level omakase. These menus, such as theTrust Me Lite
, the standardTrust Me
, and the more extensiveThe Nozawa Trust Me
, offer a progression of dishes, includingEdamame
, a sashimi course (likeTuna Sashimi
), various pieces of nigiri, and their exceptionally popular hand rolls, such as theToro Hand Roll
andBlue and Dungeness Crab Hand Roll
.What sets SUGARFISH apart, and is a major topic of conversation among New York sushi aficionados, is their unique preparation of the sushi rice. Unlike the cool rice at most sushi establishments, SUGARFISH's rice is served
warm
andloosely packed
, creating a signature melt-in-your-mouth sensation when combined with the cool fish. This deliberate technique can make the sushi slightly more delicate to handle (many customers choose to eat it by hand), but devotees insist the combination of temperature and the lightly vinegared flavor is the secret to a sublime bite. The atmosphere is generallyCasual
,Cozy
, andTrendy
, making it a great option forLunch

, and especiallySolo dining
when quality is a priority.Location and Accessibility

The distinguishing elements that make
SUGARFISH by sushi nozawa
a standout choice in the competitive New York sushi landscape:- The Signature Warm Rice: This is the restaurant’s most defining feature. The
Warm
, loosely-packed, and perfectly seasoned rice is a hallmark of the Nozawa style, creating a unique texture and temperature contrast with the cool fish that many find to be addictively delicious. - The "Trust Me" Experience: The simplified, omakase-like menus eliminate decision fatigue and consistently deliver a sequence of the restaurant’s highest-quality items, reflecting the chef's expertise and focus on consistency.
- Emphasis on Quality and Simplicity: The restaurant strictly adheres to traditional sushi, purposely excluding elaborate, non-traditional rolls (like California rolls or spicy tuna), allowing the inherent quality of the fish and rice to shine. Limited availability items like

★ 5★ 4★ 3★ 2★ 1The worst sushi ever. I got sushi Togo no rolls, the sushi didn’t hold up, rice falling apart and you can’t hold it or dip it. It’s a mess to eat, what is even worse there were two fish scales in one piece of sushi. I feel like the fish were no handled well. $80 for this it’s ridiculous.Plus, the host was kinda rude while we wait for the pickup in the bench area.
July 30 · Rosie WuThis is my favorite sushi spot. Since I visit frequently, I made sure I registered every time. They have a birthday reward program.Well, my recent birthday visit was well worth registering. The gift was a surprisingly super generous complimentary meal. It made my day. Thank you, thank you, thank you ❤️As always, the sushi is fresh, delicious and the rice is the best!
July 28 · Claudia AngaritaFirst time at this location. Skill and presentation fell short compared to their other establishments. Rice fell apart and didn’t hold well. I fear with the increase of locations, standards are being compromised.
June 13 · Caity BkWaited about 15 min for a table on a Sunday evening. Ordered the “lite” course, additional 2 nigiri pairs (bay scallops and unagi) and 2 more 8 piece rolls (bay scallops and crab). The food was decent but the rice was slightly too warm and separated for sushi. The seafood was fresh. The key was that the meal came in somewhat of a omakase style but without the entertainment of watching your chef prepare your food. Essentially you had to wait around 10 min between courses (meaning around 2 pieces of sushi) which was slightly infuriating. At the end, we requested for a faster service and this was done promptly - though I’m not sure whether to be happy they accommodated the request or confused that they could’ve served the food faster but didn’t. In any case, we are still thankful for the accommodation. However, i would note that the service was really slow even for just getting a server’s attention. I kept my hand raised for 10 - 15 min with no response and the restaurant was not big (around 30 seats). Overall, go there if you want a lot of time to talk to your dinner companion(s), but not if you want a solid and normal speed meal.
November 25 · Gezhi WThe food is very good and the prices are ok but just the most ordinary experience. A place to go to for a good sushi and nothing more
