Hill Country Barbecue Market Introduce
New York City's culinary landscape is as diverse as its population, offering everything from high-end fine dining to quick, on-the-go street food. But for those craving the soulful, smoky flavors of authentic barbecue, one place stands out from the rest: Hill Country Barbecue Market. This restaurant isn't just a place to eat; it's an immersive experience that transports you directly to a Texas-style honky-tonk without ever leaving Manhattan. Located in the bustling Midtown South neighborhood, it's a haven for anyone looking for a taste of the American South. The moment you walk in, you’re greeted by a rustic, wood-paneled space, long communal tables, and the irresistible aroma of slow-smoked meats. It’s a loud, lively, and unpretentious environment that’s perfect for letting your hair down and enjoying some seriously good food.
Hill Country Barbecue Market has earned its reputation by staying true to traditional Texas barbecue methods. They focus on quality meats, simple preparations, and a communal dining style that encourages a friendly, laid-back atmosphere. It's the kind of place that's perfect for a big group dinner, a fun night out with friends, or even a solo meal at the counter. The atmosphere is distinct, offering a casual and cozy vibe upstairs with a trendier, late-night feel downstairs where live music takes center stage. Whether you're a college student, a tourist, or a local on your lunch break, Hill Country provides an escape from the city's fast pace and an opportunity to indulge in some classic comfort food.
Finding your way to this slice of Texas in New York is easy. Hill Country Barbecue Market is conveniently located at 30 W 26th St, New York, NY 10010, placing it squarely in the heart of the Flatiron District and Midtown South. The central location makes it an ideal meeting spot for friends coming from different boroughs or for a quick bite before or after an event in the area.

★ 5★ 4★ 3★ 2★ 1This place is a quick, laid-back, cafeteria-style spot to grab some delicious Texan barbecue. We ordered some lean brisket, sausage, sweet mashed potatoes, and Mac and cheese, all of which arrived in a matter of minutes. The atmosphere is loud, rowdy, and distinctly Texan. After we ordered, there was a strange hiccup—there were no utensils available. After we finally received our silverware, we dived into our food, hopeful it would be worth the effort. However, the food itself did not fully meet our expectations. The sausage was quite spicy, but still buttery and juicy. The brisket, however, was not as great. It was somewhat dry, and lacked sufficient flavor. The sweet mashed potatoes were probably the best thing—they were sweet and nutty, yet perfectly creamy. The Mac and cheese wasn’t mind blowing, but there wasn’t anything necessarily wrong with it. Overall, this place is a nice place to grab some Texan barbecue—if you don’t mind a couple problems on the way.
June 15 · Sameer B.Hill Country brings a big slice of Texas right into the heart of Manhattan. The moment you step in, you’re surrounded by wood-paneled walls, long communal tables, and neon signs pointing you toward live music and the bar downstairs—it’s a whole immersive vibe. The ordering system feels like a fun cafeteria-meets-barbecue market hybrid: you get in line by the giant chalkboard that says “LINE STARTS HERE,” pick your meats and sides from the counter, and carry everything to your table. It’s casual and lively, with a solid drink selection (including Mexican Cokes in ice bins and a well-stocked liquor bar).I had the brisket sandwich with cucumber salad. The brisket was super tender and generously portioned, though personally it leaned a little too smoky for my taste. The cucumber salad was crisp and refreshing—a great contrast to the heaviness of the meat. The upstairs space is warm and bustling, while the downstairs offers a darker, honky-tonk lounge feel with a stage for live music. This place would be great for a big group dinner or a night out with friends looking for good BBQ and a fun, unpretentious atmosphere.
May 07 · Yunong ShiHoly moly! Best brisket sandwich I’ve ever had. Lit up every single neuron in my brain. Onions are nice and sweet the bun brings it together with a nice texture (pickles also add a good crunch) AND THE MEAT. No diddy, so tender! Tears apart at suggestion. Shout out to great service from Joby.
August 28 · Icarus DownCame here for lunch and ate the pulled pork sandwich. It was really satisfying. The coleslaw was also great. The vibe in here feels like a different world. If I didn’t know any better I would think I’m down south.
June 03 · Andrew HazelriggMid cityChopped Brisket sandwich ($18) definitely not what I expected, I thought it was gonna be like sliced brisket on between two buns, but it was more like a sloppy joe or a chopped cheese. Also, what an impractical way to serve it, like there's no way it holds together and half of it just slips out as soon as you pick it up. Flavor was fine but point is I wanted thick cuts of brisket and what I got instead was like ground beef.Jalapeño Cheddar Sausage ($8) was fine, feel like this always good choice to get no matter the spot
