Olar Noso Introduce
For New Jersey diners seeking an extraordinary culinary journey that spans the rich and vibrant flavors of the Iberian Peninsula and the Mediterranean coastline, Olar Noso in Northvale stands out as a premier destination. More than just a restaurant, Olar Noso—which charmingly translates to "our home" in Galego, the language of Galicia, Spain—is an evolution of a long-standing passion for exceptional culinary artistry. It beautifully fuses the best elements of Spanish, Italian, and Mediterranean cooking, creating a dining experience that is both authentic and inventive.
Nestled in Bergen County, Olar Noso has quickly become a gem known for its dedication to quality and seasonality. The ownership team, Matthew and Marcus Dominguez and their childhood friend Alex Dillon, have meticulously crafted a bright, vibrant, and expansive space that is always full of infectious energy. The aroma of wood-fired specialties, lively music, and buzzing conversations create an atmosphere that is cozy, trendy, and perfect for a memorable dinner or a romantic evening.
The menu is a testament to the kitchen's commitment to using unique foreign ingredients sourced through strong relationships with specialty Spanish and Italian purveyors, combined with the freshest local produce and high-quality organic meats and fish. This market-inspired approach ensures that every dish celebrates abundance, freshness, and flavor, with a constantly evolving cornucopia of daily specials accompanying the familiar menu suspects.
Patrons rave about the variety and quality of the offerings. From the crispy, light Neapolitan-style pizzas cooked in a wood-fired oven to the traditional Spanish tapas, there is truly something for every palate. Favorites often cited by regular customers include the famous Spanish Fries seasoned with smoked pimentón and sea salt—an essential starter—and a variety of unique, thin-crust pizzas where the dough is consistently praised for being light and fluffy, ensuring every bite, including the crust, is 'devour worthy.'
The restaurant's focus on handcrafted quality extends to their pasta selection. Guests can indulge in artisanal creations like the Handcrafted Saffron Pappardelle with an all-natural pork shoulder ragú infused with apricots, or the rich Rigatoni Pugliese featuring Italian sausage, broccoli rabe, chickpeas, and tomato. Seafood enthusiasts are equally catered to with classic Spanish specialties such as Paella Valenciana and Paella Marinera, along with stunning plated dishes like the Pan-Seared Wild Day Boat Halibut glazed with a Spanish Saffron-Orange Reduction, showcasing a commitment to premium ingredients from the sea.
Complementing the food is a full-service bar that is a destination in itself. Olar Noso offers a carefully curated wine list, craft beers, and a selection of inventive specialty cocktails, including a highly praised famous sangria. This, combined with the professional and attentive staff, elevates the overall dining experience.

May 10 · Ori AvgilMy peers and I frequent this establishment every few months when we want to treat ourselves. This place offers a variety from tapas, to pizzas. Normally, our first order is the spanish fries; those are amazing and they always give a healthy amount. They also have a larger option for the Spanish fries, but both come with a ton and I always have enough to take home. My usual order would be one of their wood fire pizzas which never disappoints. My family usually gets the garlic shrimp appetizer which I have mixed feelings about. The flavor is nice, but it comes with the tail on which I am not a fan of. The food always looks quite nice as well which is important because we eat with our eyes first. I have had their pastas, and even some rabbit as I have tried a lot of the options here. Overall, this is a very nice treat yourself spot. The oxtail pasta I had a few visits ago was delicious, and actually my first time having oxtail. What I love about the pizzas is that every bit of it is delicious, even the crust. There are some Pizzas where the crusts are the afterthought, but every single bit of that pizza will be gone when I am eating. Their smoked mozzarella pie is my favorite because it comes with pesto (I prefer this to tomato sauce I know I am weird), and sausage. The dough is light and fluffy which is right up my alley. I am not a fan of thin crust and too much crisp, and every bit of this pizza was devour worthy. I would get this same pizza every time I go there, it is that good. My only complaint here would be that there are no free soda refills. That does affect the experience because I do not want to pay for another soda, so I ration it throughout the meal. The experience would be better if they had free refills, but I am still happy overall with my experiences which is why I keep coming back! The staff is always very nice and the service is exceptional; once in a while we have to call them over, but it is a popular spot and they are constantly busy. I also really like that this is a casual spot; I have come dressed in shorts before which is refreshing especially to someone who is tired of dressing up a lot. I would definitely give this place a shot since they have something for almost anyone. If you are not that hungry, their small plates are quite good and they have large portions as well!
August 08 · Dave RotesFirst time at this establishment and we will be back to try everything on the menu! So many tapas, pizzas, pastas and delicious dishes to share! Had the roasted beet salad, Spanish fries, pasta and octopus. No room for dessert but they looked amazing. Great service and beautiful interior.
May 19 · Elisa Bruno-MidiliOlar always exceeds our expectations. The freshness of the food, the combinations of flavors, and of course the amazing staff is the cherry on top! The experience is worth it. We appreciate knowing that when we go to Olar we are always treated like family. We have our favorite meals, but their specials change often and we can’t help but try the new things they come up with. I highly recommend it, but definitely make a reservation. It’s not guaranteed to get a seat when you walk in, but worth a try. Keep up the good work in all you do!!
May 24 · Jennifer TeskerWe could not be happier with how our evening turned out at Olar Noso.A pretty place located right off of Tappan road, there’s ample parking and not a long wait time around 20:00 to be comfortably seated. The restaurant is spacious, lively but not noisy, and the staff is incredibly friendly and attentive. Liv, our server, was on point with giving explanations and suggestions on the entrees. We absolutely loved the Salad: I think it consisted of: shredded ricotta salata, pear, pomegranate, arugula, walnuts, and farro (wheat berries), yum, a perfect symphony of flavors which has become one of my favorite dishes. The three of us ordered to share, we commenced with the Gnocchetti "Little pillows" of goat cheese and ricotta with hand-crushed organic tomato, caramelized eggplant, basil, ricotta salata, we found it to be a perfect combination of flavors with every bite. Next were the pizzas; Soppressata pizza topped withtomato, mozzarella, Soppressata, chili oil and honey (the added honey complimented the chili oil). Next, I was outvoted to try the pistachio pizza.. I’ve never had this in my life and asked Liv (as a fellow foodie) for guidance… with mixed reviews, it was decidedly my least favorite, however, it would be interesting to try it with pistachio nuts in a 60/40 blend (in a Vitamix) with ricotta as a spreadable topping (similar to the way a Nutella pizza is prepared). The food was amazing, you can tell their heart is in courtship with creativity by their constant pursuit to invent new and well balanced entrees (with lots to choose from). It’s great to see the way the restaurant blends locally sourced and seasonal ingredients into new creations bringing the farm to table experience for their patrons to enjoy. I would absolutely recommend this place and look forward to visiting again.
