Pretty good Fuzhou cuisine restaurant. Come here for your typical peanut noodles, Fuzhou wonton and fish balls. Price has increased but still reasonable overall. They’ve been around for a very long time. Now it’s newly renovated. There are no bathrooms. Pretty much can’t find parking in this area. - Sam

## Introduction / Overview

For New York residents, particularly those who frequent the dynamic culinary scene of Flushing, Queens, discovering an authentic taste of Fuzhou cuisine is a rewarding experience. Ding Bian Hu: 陈记鼎边糊 is one of Flushing's long-standing, authentic local treasures, specializing in the regional cooking of the Fuzhou capital in the Fujian province of China. Fuzhou cuisine is known for its light, savory, and often slightly sweet and sour profile, with a strong emphasis on seafood and soup-based dishes.

The restaurant's namesake dish, Ding Bian Hu (which translates roughly to "wok edge paste"), is a unique and comforting staple, a soupy dish featuring delicate, thin rice-flour sheets scraped from the side of a wok, typically served in a flavorful broth with various meats and seafood. While the prices have increased over time, it remains a beloved, budget-friendly spot for essential Fuzhou favorites like their famed peanut noodles, Fuzhou wonton, and fish balls. Having recently undergone a notable renovation, the interior now offers a much-improved, cleaner, and more comfortable setting while maintaining its reputation as a reliable spot for traditional Chinese comfort food any time of the day.

## What is Worth Choosing

For local New Yorkers seeking to dive into the unique flavors of Fuzhou cuisine, Ding Bian Hu offers a few items that are essential for any visit, particularly those looking for an authentic and satisfying experience:

Firstly, you must try the dish the restaurant is named for: Ding Bian Hu (鼎边糊). This is a culinary marker of Fuzhou and offers a light yet deeply savory experience. The texture of the thin rice flour sheets scraped from the wok's edge is unlike traditional noodles, making it a unique comfort food that is perfect for a chilly morning or a late-night supper. Pair it with one of the soup sides to get the full experience.

Secondly, the Peanut Noodles (Ban Mian) are highly recommended and often mentioned in customer reviews as a stellar example of the Fuzhou style. These noodles, often tossed in a savory and slightly sweet peanut sauce, are the quintessential fast and satisfying Fuzhou meal and an excellent Quick bite or lunch staple. Many choose to pair this dry noodle dish with a side of Fuzhou Wonton or Fish Balls served in a clear broth for a balanced meal of wet and dry textures.

Finally, while the namesake dish and noodles are primary draws, be sure to sample the small, fried items. The Fried Oyster Cake is a classic Fuzhou street snack. While the ingredients may have adapted over time, the spirit of this inexpensive, savory fried cake offers a great glimpse into the regional snack culture. As a final reminder, always prepare to pay with Cash-only before you visit to ensure a smooth, quick, and traditional dining experience at this Flushing landmark.
