If you grew up in NYC or Long Island, you probably associate summer with Ralph’s. Ralph’s has been around since the 1920s, and they’re really serious about Italian Ice. This location is smaller and only really has the basics because it’s shared location with a hot dog shop, but—in my opinion—it has the essentials. I don’t know if this is unique NY slang or not, but a “water ice” is your classic Italian Ice made of crushed ice and flavoring. Except the bubble gum, which has real bubblegum pieces and is my favorite. I used to make myself try other flavors for the sake of variety, and cotton candy is also very good, but I no longer see the point of getting anything less than what I really want. And that’s bubblegum.

I asked for toasted marshmallow ice, so imagine my surprise when I had eaten a bit and found the bottom 2/3 of the cup had been filled with graham crunch ice instead. I didn’t ask for s’more. Maybe I didn’t ask for s’more because I’m allergic to wheat, and graham crackers will make me really sick. Which they did! That’s why I DIDN’T order them. Respect Ralph’s, respect the recipes, don’t poison customers.
