Brooklyn Granary & Mill Introduce
Introduction / Overview
In a city saturated with bakeries, Brooklyn Granary & Mill has carved out a truly unique and essential niche within the New York food scene. This isn’t your typical corner bakery; it’s a fully integrated operation—a mill and bakery hybrid driven by a profound commitment to the source of its ingredients. Founded by Patrick Shaw-Kitch, the former head baker at the acclaimed Blue Hill at Stone Barns, BGM is dedicated to bringing freshly stone-milled whole grains from regional, regenerative farms directly to the people of New York.
The core philosophy here is simple but transformative: better flour makes better bread. Unlike the commodity flours that dominate the market, BGM mills its grains on-site using two 40-inch New American Stone Mills. This ancient method preserves 100% of the grain’s bran, germ, and endosperm, resulting in flour that is not only richer in nutrition but explodes with complex flavor. As a showcase for this exceptional ingredient, the cafe and bakery exclusively use their own 100% freshly milled whole grain flour to create everything from rustic loaves to sophisticated pastries.
Customers are enthusiastically embracing this difference, noting the resulting pastries are "so soft and wholesome" and remarking on the spectacular taste of whole grain baking. Reviews highlight that the space itself is part of the experience, described as a "workshop, bright and airy," with a beautiful, communal atmosphere. For New Yorkers who care about where their food comes from, sustainability, and authentic flavor, Brooklyn Granary & Mill is a necessary destination that offers both a superior product and a meaningful connection to the regional grain economy.
Location and Accessibility
Brooklyn Granary & Mill is conveniently located in the thriving Gowanus neighborhood of Brooklyn, a hub known for its blend of industrial history and modern, innovative businesses. The official address for the bakery and mill is 240 Huntington St, Brooklyn, NY 11231, USA. This area is easily accessible for residents across Brooklyn, and a worthwhile trip for those coming from other boroughs seeking this specialized product.
The space itself, often described as bright and airy, reflects the business’s transparent and artisanal nature. While specific, detailed accessibility features like dedicated parking or ramps are not explicitly listed in all public information, the large, former warehouse setting typically offers a relatively open floor plan conducive to access. Inside, seating options encourage community, with a "communal table, high top seatings and some seating outside on the sidewalk," perfect for enjoying a pastry and a cup of coffee.
Situated within a rapidly developing commercial zone, the Huntington Street address ensures that the bakery is a familiar and reliable stop for those in the immediate neighborhood, as well as being close to major Brooklyn thoroughfares. The location firmly plants BGM as a pivotal part of the local food infrastructure, serving both individuals and professional chefs.

★ 5★ 4★ 3★ 2★ 1Absolutely delicious. Every piece of pastry is so soft and wholesome, made with fresh ingredients and a lot of love!!Every time we come back we always try something new, but without fail get the chocolate chip cookie!! One of the best we’ve had.The space is also beautiful, mimics that of a workshop, bright and airy. There’s a communal table, high top seatings and some seating outside on the sidewalk.
July 26 · Donna WangWho would have thought that pastries with whole wheat flour would be so delicious? Clearly this place. The kouign amann was spectacular! Not too sweet, just the right amount, and super crispy and flaky. The butter oatmeal cookie was great as well. Don’t sleep on their coffees! Honestly such a good bakery, will be back to try more since they rotate their stuff all the time!
August 30 · Bianca RitortoIt’s both: a unique and delicious addition to the coffee/food scene; *and* a very welcoming and friendly spot to post up for a spell.Drip coffee is always ON POINT; delicious craft beans, perfectly brewed. Pastries and breads are made with care and craft, using a range of delicious local grains ground on site. Einkorn wheat loaf is home in a tin.If you live nearby it’s a great go-to; otherwise it’s worth a detour.Tip: check out the fridge case with rotating fresh products from nearby farms/producers; some gems in there.
September 08 · Tom DavidsonThe bakers here are true artists. It’s amazing how each bread can have such a distinct texture and such rich, layered flavors. They say they grind their grains with a stone mill, and you can really tell how much they care about quality in every bite. The Kouign-amann, in particular, shows an incredible level of precision — you can almost feel the attention in every delicate layer. Even the famed Kouign-amanns from top bakeries in New York don’t come close to what they make here. This place is a hidden gem that I’m certain will become famous soon, and I can only hope with all my heart that they’ll maintain this quality even after they gain more fame. I wish every bread lover in the world could come here at least once.
August 09 · Sanguk “Namkoo” AhnBrooklyn Granary's bakery cafe is an absolute gem — hands down one of the best bakeries and cafés I’ve ever been to. Every single product is so good — the kind of place where everything looks wholesome and beautiful but tastes like an indulgent treat (in the best way!). It's only a matter of time before they make the top lists on NYT, Eater, Infat etc.The Einkhorn bread is perfectly nutty and hearty, the biscuit is out-of-this-world flaky, and the oatmeal cookie might be the best I’ve ever had. It’s clear that so much thought and care goes into everything here.Patrick and Laura are not only incredibly talented but also some of the kindest, most thoughtful people you’ll meet. They’ve created such a warm, welcoming space. As one of the founders of Driftaway Coffee, I also have to say — they brew the coffee so well. It’s a real joy to see it prepared with such attention to detail and served alongside such amazing food. Can’t recommend this place enough!
