---For anyone residing in or traveling through Fairfield County, deciding to choose Flour Water Salt Bread is a decision to invest in a superior quality product that elevates the everyday routine. The bakery’s name is a promise, and it delivers on that promise through every item baked.
What is truly worth choosing here is the taste of dedication. The sourdough boulangerie is often cited as the centerpiece of their offerings. This is bread made with patience, offering a complex, tangy flavor and a crusty exterior that sets it apart from mass-produced loaves. It is the perfect foundation for any meal, whether used for sandwiches or simply enjoyed with butter. The fact that customers are willing to travel long distances and brave a queue speaks volumes about the quality of this core product.
Another non-negotiable must-try is the famous croissant. Patrons describe them as "perfectly layered," "flaky," and "sublime"—high praise that is entirely warranted. The careful lamination process creates a light, airy interior and a delicate, crisp exterior that shatters beautifully upon the first bite. For a unique sweet treat, the sourdough chocolate chip cookie is an unexpected highlight, balancing the slight tang of the sourdough with the comforting sweetness of warm chocolate, a combination that has been declared "nailed" by repeat customers.
Choosing this bakery means supporting a local Connecticut business that prioritizes craft over volume. Given the high demand, it truly is worth making the effort to arrive early, especially for weekend breakfast items, to ensure you can sample the full array before they sell out. Whether you are stocking up for the week with a selection of artisanal breads or simply grabbing a perfect pastry for a mid-morning treat, Flour Water Salt Bread offers an authentic, exceptional baking experience that solidifies its status as a must-visit destination in Darien, CT.

★ 5★ 4★ 3★ 2★ 1I drove 40 minutes and braved the line for a sourdough boulangerie, and boy, was it worth it! The perfectly layered and beautifully crafted croissant. Flaky, buttery, Sublime! Warm sourdough chocolate chip cookie. With the perfect amount of sweetness nailed it! Tonight, sourdough sandwich, here I come! This place has earned a repeat customer.
November 17 · Manjusha - MJ KothariGreat selection if you get there early! Everything is amazing from their sourdough bread to bagels. Was impressed with the cream cheeses they have too! So good. Worth the $$
September 15 · David PoloniaFinally got my hands on some highly coveted baked goods from FWSB! With the high popularity (order ahead is crucial) holiday season hours shifting around (odd hours anyway) it took two visits to make this happen. End result: very good, especially the almond croissant (pictured) that was an absolute piece of artwork. Size of each piece was also very impressive. The only thing holding this review back was the relatively high price and relative inconvenience. Very curious to try their breads on a future visit.UPDATE: After trying the sour dough and brioche, have to admit that FWSB is 💯
April 24 · Kevin FPizza was delicious! We got the Diavola pizza and it was the perfect size for 2 people to split. It took less than 10 minutes for them to make. Restaurant is on the top floor of a food hall with plenty of seating in the building. Would definitely come back and have again!
January 13 · Emily HanleyLa meilleure boulangerie du comté de Fairfield... must try this special pastry named "Kouign-Amann." And of course, the original Sourdough Bread is always a must-have to take home.
