Most of the loaves of breads are sourdough (and all organic), and Hawthorne Valley actually grows their own Rye. The vegan walnut chocolate chip cookie and the cinnamon buns use whole wheat pastry flour. The 100% sourdough spelt and rye loaves are among the densest breads I have ever eaten and are fermented for over 24 hrs. The farm is usda certified organic, but beyond this and doesn't even use any certified organic sprays.
