## What is Worth Choosing
Niuddo is a distinct culinary experience, and for New York locals, the focus should be squarely on the core Guizhou-style noodle dishes that define its reputation. The essence of Guizhou cuisine is best sampled through its specialty meats and sour-spicy flavors.
The top choice for a first-timer should be one of the classic stewed options, specifically the Stewed Beef Brisket ($8.00) or the Stewed Lamb ($8.00) rice noodles. These options showcase the rich, savory broth and tender meat that are the foundation of this regional comfort food. The broth here is noted to be authentic, savory, and very flavorful, making the base of the dish incredibly satisfying. Customers have the option to adjust the Spicy level and choose between a soup base or a "dry-stirred" preparation (dry-mix), allowing for a truly personalized experience.
For the adventurous or those who appreciate authentic Chinese offal preparations, the Marinated Beef Offal ($7.00) or Marinated Chitterlings ($7.00) are highly recommended. These specialties are key elements of Guizhou's flavor profile and are prepared with deep, aromatic marinades that truly distinguish the dish.
Finally, to complete the authentic experience, be sure to add a side of the vibrant cold dishes. The Crispy Cucumber ($5.00) or Wood Ear Salad ($5.00) provides a refreshing, tangy contrast to the hot, savory noodles, perfectly embodying the sour-and-spicy balance that makes Guizhou cuisine a must-try in the Flushing food scene.

★ 5★ 4★ 3★ 2★ 1Every time I am in NYC this is where I would get my break fast! Their beef soup rice noodle and vegetarian rice noodle soup are authentic and savory and flavorful!!!
May 31 · Nancy S$10 for a bowl of beef noodles. Spicy level is optional. $1 more gets you double portion noodles. Very sizable.Place was bustling with hungry customers. Oddly, mostly females chowing down. Seating capacity is limited to about 11 people. Can get pretty hectic. Took about 5 minutes to order & another 5 minutes for food to be ready.Nice spot if you are hungry. No place to put my bike. Noodles were flavorful and had a kick of spice 🌶️ based on preference. Would definitely return again. Got a drink from next door while waiting.
February 06 · Frugal Cyclist3.4/5. Decent for the price but it shows. The noodles are frozen, prepackaged noodles with low gluten content, meaning it breaks apart with an unpleasant mouthfeel when chewing. That being said, to serve soup noodles, at or below $10 on Main Street of Flushing, while making rent, is admirable in a sense, so maybe cost-cutting can be forgiven. This is a venue that serves locals. It's a decent value but not something to write home about.

April 05 · May LiThanks this small spot saved me in cold and windy late winter night. Their hot and sour vegan vermicelli soup with fried peanut hooked up my home sick deep rooted my years ago.
