Kabawa Introduce
In a city known for its diverse culinary scene, Kabawa stands out by offering a deeply personal and refined exploration of Caribbean cuisine. Located in the East Village, this restaurant is a creation of acclaimed Chef Paul Carmichael and is a part of the esteemed Momofuku family. Unlike a casual eatery, Kabawa provides an elevated, fine-dining experience centered around a prix fixe menu. It's a place where traditional Caribbean flavors are reimagined with modern techniques, resulting in a dining journey that is both nuanced and distinct. The atmosphere is a blend of cozy and trendy, with a subtle yet intentional nod to Caribbean culture in its design and instrumental music. While the food is the star of the show, the attentive service and welcoming atmosphere are what truly make a meal at Kabawa feel like a special occasion. It's a destination for those looking to discover a new perspective on the flavors of the islands in a sophisticated setting.
Kabawa is situated at 8 Extra Pl, New York, NY 10003. This address is in a small, graffiti-covered dead-end alley just off the Bowery, giving it an intimate, "hidden gem" feel. Its location in the vibrant East Village makes it easily accessible via public transportation, with the Second Ave F train station being a short walk away. For those who can't get to the F, the N or R trains at Prince St are also within a reasonable walking distance. The restaurant and its adjacent bar, Bar Kabawa, are distinct spaces with separate entrances but a connecting corridor. While the provided information does not explicitly state accessibility features, a wheelchair accessible entrance and restroom are confirmed by other public sources for both the restaurant and its bar, ensuring a welcoming environment for all guests.
Kabawa's service model is built around a curated and immersive dining experience.
- Dine-in Only: The restaurant operates on a strict dine-in policy, as the prix fixe menu is designed to be experienced on-site with full table service. This focus allows the kitchen and waitstaff to provide a highly controlled and exceptional meal from start to finish.
- Table Service: Guests are provided with professional and attentive table service. The servers are known to be well-versed in the menu's nuances and are praised for their welcoming and professional demeanor.
- Reservations Required: Due to its intimate size and high demand, dinner reservations are required. It is highly recommended to book a table well in advance, as the restaurant often has a waitlist. This planning ensures that every guest receives a carefully orchestrated experience.
- Prix Fixe Menu: Kabawa's menu is a set three-course, prix fixe experience. Guests choose from multiple options for each course (starter, main, and dessert), a format that allows the kitchen to showcase the depth and diversity of Pan-Caribbean cuisine with thoughtfully sourced ingredients.
Kabawa's unique character and appeal stem from a combination of its culinary vision and its distinctive environment.
- Great Cocktails: While the restaurant offers wine and beer, it's particularly praised for its impressive cocktail program, which often features unique, rum-forward drinks that perfectly complement the food.
- Open Kitchen: The restaurant features an open kitchen, allowing diners to watch the chefs at work. This "chef's table" seating around the large, three-sided wooden bar is a prime spot for a more engaging and interactive dining experience.
- Cozy & Trendy Atmosphere: The ambiance is a key part of the dining experience. The dimly lit, intimate space is romantic and upscale, with a trendy feel that makes it a perfect spot for a special night out.
- Live Performances: The music and atmosphere are intentional and immersive, featuring instrumental Caribbean tunes. This adds to the overall experience, creating a lively yet refined environment.
- Personal & Nuanced Cuisine: The menu, a "love letter to the Caribbean" from Chef Paul Carmichael, is a major highlight. It offers a sophisticated take on traditional dishes, from pepper shrimp to "jerk" duck sausage, showcasing an attention to detail and a personal narrative that is rare to find.

A visit to Kabawa is a deliberate choice to immerse yourself in a unique and high-quality dining experience. What is truly worth choosing is the opportunity to explore a cuisine that is often not seen in a fine-dining context. The prix fixe menu ensures you get a comprehensive taste of the chef's vision, with a journey from starters to desserts. While the menu changes seasonally, certain standout dishes have garnered high praise. For example, the pepper shrimp and "jerk" duck sausage are often cited as highlights that perfectly exemplify the fusion of traditional flavors and modern technique. The goat with spicy scallop creole is another popular choice.
The service is another key reason to choose Kabawa. The staff's hospitality and attentiveness are frequently mentioned in customer reviews, with one person noting that the service and atmosphere were "excellent," even on a night where the food didn't quite meet their expectations. The chefs are also known for their personal touches, offering suggestions and even preparing leftovers in a way that makes the dining experience feel truly cared for.
While some dishes, like the Chuletas Can Can, may be an acquired taste or have inconsistent execution, the overall meal is designed to be a rewarding adventure. The accompanying sides, like the rice, beans, and pineapple-glazed sweet potato that come with the main courses, are often praised for their incredible flavor and a testament to the chef's attention to detail. In a city of many options, Kabawa offers a focused, refined, and personal dining experience that stands in a class of its own. It's for the diner who appreciates a culinary journey that is thoughtful, a little unexpected, and full of flavor.

★ 5★ 4★ 3★ 2★ 1Excellent service and atmosphere but food fell short of expectations.I would definitely skip their chuletas can can, it’s for 2 people and is an additional $75. It looks so good online but the actual product did not even look close to the online photos. It was too salty and the skin was so crunchy that when I first bit into it I thought I ate a piece of bone.Between the two of us, dinner came out to almost $500 and it just was not worth the price despite the hospitality.
August 19 · Susie SuAmazing dinner! We definitely over ordered, but the chef gave us great suggestions for how to prepare the left overs! Food was delicious, and the open kitchen was very fun to watch.
August 17 · Michi WongThe kitchen area is very clean and you can see they are cooking. The people seem like they have enthusiasm for their jobs; they care about their food. For the food, the starter - the fried cassava comes with roti and 4 different sauces to eat with it was amazing. It has a very nice texture and tastes like mochi.I ordered BREADFRUIT which is an octopus starter. I like the taste - it was refreshing. For the main course, I'm very surprised by the COBIA which is a blaff covered with sauce that has the taste of sweetness and comes with a little bit of soup with bay leaf sauce as decoration. The entire combination of the food was amazing - a bit of sweetness and saltiness that matches my taste. Before the dessert they gave us tamarind for refreshing, which I liked and also appreciated before the dessert.Lastly, for dessert I had the sorbet of the day! I was very impressed as I thought it was just a normal sorbet, but it is coconut flavored and comes with actual coconut! I like the flavor and how they presented it!One thing I think they can do better is that because I assume not everyone knows about Caribbean food, when the waiter places the food I think if they can explain more about the ingredients for me to have more understanding of the food and culture, that will be great. Other than that, everything else is great - I had a good time over here! ;)
August 30 · Han LWe would we have never known that it was Day 2 for Kabawa, Bar Kabawa’s formal dining sibling. Service was smooth and the Caribbean-inspired menu was perfection. Cocktails were fabulous as well. Rafa and Sami were wonderful, and they kept checking in on us to make sure we were enjoying ourselves. My friend and I enjoyed the pepper shrimp, breadfruit tostón, Cobia, Goat, Coconut turnover and the Roti & dipping sauces. In terms of cocktails, we had the Kapitán (which was way too easy to drink…), Martini Kabawa and Swanky Panky.Great overall experience! Will be back!
March 27 · Maria TiuA solid spot with friendly staff at the bar seat location. I think its a solid spot, especially if you’re not familiar with Caribbean food and want to ease into it with some americanized flavors. Its 3 courses but a LOT of food as there are “snacks” and sides not listed on the menu
