April 29 · MarshaI tried the plain Basque cheesecake. It was so bad, I had to dump it after one bite. Basque cheesecake is a very simple dessert. You just mix the cheesecake mixture, which is mostly cheese, put it in a mould lined with some baking paper to keep it from sticking, and lightly burn it so that it has a slightly bitter flavor on the outside. In Spain it’s usually fairly creamy on the inside. Sometimes it’s made with sheep cheese, so you can taste a slight gaminess. What makes it good and classic is that it’s simple. Little Grace doesn’t trust the age old process. Theirs tastes like they add tons of sugar, so much that you can taste the granular texture, and then they seem to caramelize the top. it almost tastes like those cube caramel candies you would get in your Halloween candy bag. Their cheesecake is WAY too sweet, taste slightly artificial, lacks that lovely bitterness that a proper Basque cheesecake should have, and is dense like Italian cheesecake. It’s as if someone were trying to make it a more kid-friendly dessert. Yuck! And over $15?
