This was a last minute reservation and I wasn’t expecting much. The door is located in the basement so it was a little confusing to find. But the atmosphere of the restaurant is very nice. It’s a small space and surprisingly intimate. The omakase is very reasonable priced at 12 pieces for $65. It’s a set menu with a la carte after. Waiters were all very attentive and the sushi chef was friendly and knowledgeable. The fish was fresh and delicious. Drinks were inventive and also very good. Definitely recommend. - Duyen Hua

In the bustling, high-energy environment of Times Square, a truly intimate and refined dining experience can seem like a fantasy. Yet, tucked away on a side street and hidden within the Sanctuary Hotel is Sushi By Bou, a a remarkable sushi restaurant that defies expectations. This isn't your typical sushi counter; it's a speakeasy-style gem that offers a high-end omakase experience in a surprisingly approachable and affordable setting. Known for its cozy and trendy atmosphere, Sushi By Bou provides a unique and memorable escape from the city's frantic pace. The concept is simple yet brilliant: a timed, chef-selected tasting menu that focuses on showcasing the freshest, most exquisite fish in a way that is both traditional and modern. It’s an elevated culinary journey that combines expert craftsmanship with a vibrant, welcoming vibe, making it a must-visit destination for anyone with a love for sushi.

The core of the Sushi By Bou experience is the omakase, a Japanese phrase meaning "I'll leave it up to you," where the meal is curated and prepared by the chef. This trusting relationship between diner and chef is central to the dining experience here, allowing you to relinquish control and simply enjoy the artistry. The restaurant specializes in Edomae-style sushi, a traditional method that involves carefully aging, marinating, and preparing the fish to enhance its natural flavors before it is served over perfectly seasoned rice. This meticulous attention to detail is evident in every piece of nigiri, from the Hamachi to the Toro, ensuring each bite is a perfect balance of texture and taste. The friendly and knowledgeable sushi chefs are a key part of the experience, guiding you through each course, explaining the ingredients, and creating a relaxed and interactive atmosphere. Despite its fine-dining quality, the vibe at Sushi By Bou is anything but stuffy. The lively music, inventive drinks, and engaging staff create a fun and "vibe-y" setting that makes the experience feel both luxurious and laid-back. This balance is what makes Sushi By Bou a standout in a city full of excellent dining options.
