- Miso Ramen*
(Chicken & vegetable stock blend). Miso is a fairly recent development in ramen soup, a specialty of hokkaido and northern honshu that originated in the 1970s. Our miso is second to tonkotsu in terms of richness of flavor. Our miso ramen broth tends to have a variety of flavors coming from a balanced mixture of various miso's(fermented soy bean paste), combined with umami flavors coming from wok sauteed corn, leeks, scallions, bean sprouts, chicken sausage, pork belly and bok choy. I had the spicy tonkotsu ramen and a side of karaage, both of which were excellent. The ramen serving was generous in a rather large bowl. The chashu slices were very tender and a good thickness, and had a delicious sweet glaze on them. The broth was rich and the meal was filling without needing to order more noodles. Not cheap but not too expensive either, especially considering the high quality. I’m definitely planning to go back and try some other options. My food was served quickly after ordering, but I felt like the service after that wasn’t particularly attentive - no waiter checked in after I got my food, and I had to wait around for a while after finishing before I could get the check. Not a huge deal though, and the servers were still polite and the food was excellent.

Fried rice seemed to be based on butter + soy sauce, and that’s my fav flavor base for fried rice so can’t complain at all.Ramen had very good broth that was flavorful and thick enough, but not too salty and not too thick. I really liked its balance. Noodle was slightly softer than my preference and chasu was bit drier than I hoped, but the broth was really spot on for me and I would love to get the ramen here again if next chance.
