Popup Bagels Introduce
In a city where bagels are a culinary institution, it takes something truly special to stand out. Popup Bagels, a spot that has garnered a loyal following, offers a fresh and distinct approach to this New York staple. Located in the heart of the bustling SoHo neighborhood, this bagel shop has built its reputation on a simple, yet brilliant, concept: serving bagels hot and fresh, straight from the oven. This focus on quality and immediacy creates a product that is unlike the standard New York bagel shop experience. The shop's unassuming facade and lack of indoor seating are part of its charm, encouraging customers to take their piping-hot bagels with them to enjoy on the go. It’s a no-frills, all-flavor approach that has captivated both locals and tourists looking for an authentic and high-quality breakfast.
The unique "rip and dip" style of eating is at the core of the Popup Bagels experience. Unlike a traditional bagel shop where your bagel is sliced and prepared, here you receive a whole, steaming hot bagel with a side of your chosen schmear. This method is praised by many for preserving the integrity of the bagel and allowing for a perfectly warm, soft interior with a satisfyingly crunchy exterior. While the menu is intentionally simple—focusing on classic flavors like plain, everything, sesame, poppy, and salt—the quality is anything but. The bagels are known for their exceptional texture and freshness, and the cream cheese options, including a popular scallion cream cheese, are the perfect complement. It's a testament to the belief that when a product is truly excellent, it doesn’t need a lot of embellishment to shine.

What Is Worth Choosing
Popup Bagels is a must-visit for anyone who appreciates a truly great bagel. What makes it worth choosing is its unwavering commitment to serving a superior product. The promise of a warm, fresh bagel is a game-changer. As one reviewer noted, the bagels are "so so soft on the inside, and a delicious warm bagel," a quality that makes them stand out in a city filled with bagel shops. While some traditionalists might miss the classic New York bagel's denser chew, Popup Bagels offers a lighter, fluffier texture that has its own passionate fan base. The "rip and dip" concept, though simple, is a key part of the experience, ensuring that every bite is as warm and fresh as possible. This is a bagel that is meant to be eaten immediately, savoring the moment it comes out of the oven.
The excellent, friendly service and efficient process make the experience even better. Even if there's a line, the wait is typically brief, a small price to pay for such high quality. The location's close proximity to Washington Square Park also adds to its appeal, offering a beautiful backdrop for a quick breakfast. For a New Yorker who loves bagels or a tourist on a mission to find the city's best, Popup Bagels is a unique and rewarding stop. It challenges the conventional bagel experience in the best possible way, proving that sometimes, the simplest and freshest approach is the most delicious.

★ 5★ 4★ 3★ 2★ 1A short line stood in front of this not-so-popular yet quietly known joint. At the door, the man asked for our order and wrote it directly on the bag. Warm and welcoming he was.Inside, the wait was brief. We went for a plain sesame and an all-seasonings bagel, both with scallion cream cheese. The bagels arrived hot and oozing with steam, so hot they were untouchable at first. The cream cheese could have used more scallions for that extra crunch, but the standing counter made for the perfect spot to savor this classic Jewish delicacy.
August 07 · Hossam MoustafaAt first glance, the line may prompt you to walk away, but I promise it’s worth a shot! I came here while having this spot on my bucket list during my trip to NYC. I love bagels beyond measure, and these lived up to the hype. Not horribly crispy on the outside, but just enough for a little crunch. So so soft on the inside, and a delicious warm bagel. I’m a plain cream cheese girl at heart, but everyone recommends trying out the new flavors. Plus, Washington Square is a close walk so enjoy your bagels in the park(if you don’t mind homeless of course)! Definitely can’t wait to come back when I’m in NYC, and looking forward to them opening in Miami!
July 21 · lyla fariaLiterally the best bagels I have ever had. Perfect amount of salt on the salt bagel, and the everything bagel is completely coated. Cream cheese was delish. And the service to us and our kids was even better. We will absolutely be coming back to Popup Bagels at Assembly Row in the near future!
September 10 · Patrick LenehanThis is quite literally one of the only bagel places that I find myself coming back to!The line may be long depending on the time you go but it goes by pretty fast. The minimum order is 3 bagels- I usually get the everything, sesame, and plain bagels. Their bagels have the pefect consistency, fluffy but chewy, and it's addicting.Their scallion cream cheese is so good and goes well with every bagel, but they also come out with fun seasonal schmears so it's good to check out their website or their ig for any updates on those.
August 20 · Sarina IwaiWe had to choose between Leon’s bagels and popup bagels. The line for popup was a little shorter so we went here. I’m glad we did. They have 4 choices salt, plain, everything, and poppy seed. So we got one of each. They are constantly making fresh ones as you watch and wait and try not to drown while your mouth is just watering as you smell these delicious aromas. We got one blueberry crumble and one scallion spread. They were so good on these fresh hot bagels. The servers are all great. They all act like they have a share in the business and want it to do well. You won’t regret stopping here.
